De re coquinaria, by Apicius (Rome, 5th century).
De re coquinaria (On the Subject of Cooking) is attributed to Apicius and may date back to the 1st century, though the oldest surviving copy comes from the end of the Roman Empire, sometime in the 5th century. As with most ancient texts, copied and edited over centuries, the original cookbook is shrouded in mystery.
Apicius could have been one of several renowned gastronomes of old Rome, but whoever was responsible, 2000 years later the book has quite a lot to tell us about the Roman diet. Throughout its ten titles, meat, fish and seafood play an important role, but vegetarians are also well-served. Spices and aromatic herbs, stews and casseroles are mixed with wise advice for preserving food or preparing sauces. As for the recipes themselves, any attempt to duplicate them will be at best a broad interpretation.
